Get four plug outlets five feet off the floor where you plan to mount your flat screens. Because two outlets are never enough. And you'll also want a cable outlet right next to it. That way all power cords are out of sight. I also asked for extra outlets in the garage and did my builder ever deliver! I have 38 outlets to choose from. Plus a 240 volt outlet for an air compressor. I also had a photo cell installed so my front door and exterior garage lights come on when it gets dark and go off when it's daylight. It's on its own circuit, so I can turn it off and operate the lights the regular way, but I never do.
Then keep it to what will actually be used/enjoyed- use it for the surround 7.1 and the projector leads. Whatever is leftover can go toward the equipment.
The prewiring for speakers all over the place is a waste of money- you'll most likely not use all leads, and you'll find you'll not use it enough to justify the expense. Even something as simple as an intercom is usually used very sparingly. Yeah, when new it's fun but it's short-lived!
A number of people have stated it plainly: wiring for sound in every room or even most rooms, except a theater-type room, is a total waste of money. Do not do it. Seriously.
