IMO you would be devaluing the house if you went with drywall. The ceiling is beautiful.

You could just paint it all. If you're gonna make it hideous skip the drywall and go for paint. Hopefully in whatever HGTV sees as the color of the week. Btw I consider painting a nice wood beam ceiling with painting brick. Dumb
In some of your pictures, I would say absolutely do not drywall. The ceiling in the bedroom is lovely. The dining area is great with the drywall ceiling and wood walls.
The other pictures, it's hard to get context and see it as a whole.
If was going to do anything, I'd rip out the tile in the dining area and replace it with something lighter. Even that's not necessary.
If you really want to go this route, you can just texture right over the wood, skipping the drywall part. I did this over some gloomy paneling and it has lasted over 10 years. Brightened the place up considerably.
How do you hang pictures? What you could do is get large pieces of painters canvas, paint them a soft solid color and hang the canvas to the wall, like drywall. Far less expensive than a re-do, and you don't mess with what other people would adore. And, if you hate it...you can take them down and throw them out.
The wood is great.
However if your taste (at the moment) is color, install drywall directly over the existing wood. You can install 1/4" drywall over the existing wood with adhesive (and perhaps a few screws). It can be removed later by yourself or a new owner fairly easily.
Too much wood for my liking. I would do the ceiling for sure and see how I liked it after that. It appears to be good quality wood paneling unlike my cheap ugly stuff which I did paint over. I don't think I would paint over the good stuff.
