Carrots! Purple cabbage leaves ugly gray stains.

If the stain really bugs me, I use Barkeeper's Friend and a scrub brush. If that doesn't work (normally does), then I'll use baking soda and hydrogen peroxide (my other go to cleaners). Only in extreme cases do I need to resort to bleach.

All these methods will kill whatever germs may be resident in those stains...

Just rinse really well and you're good.

You do realize that those stains make zero impact, right?

Those garbage white starboard cutting boards are also hell on your knives. If you can’t bear to use something that’s discolored, then go get a really high quality end grain wooden cutting board and oil it often.
