Since you're asking about sealant for gas lines I'll assume you are referring to black iron pipe(?)
Usually a BBQ grill can be connected with a copper line and run efficiently- copper and taper fittings DO NOT require sealants.
If it is black iron the best advice is to check with your AHJ. The code that specificity refers to sealants makes no destinction between tape or dope. So its whatever the inspector wants! If you want to argue that there is "no destinction" be my guest! But you ain't getting a signed-off inspection.
I personally prefer dope to tape- I believe it polishes and lubricates better than tape. And if you get a little over-zealous with tape you always run the risk of shards getting into valves. The biggest "advantage" with tape is its clean- you're not wearing dope all over your hands and clothes.
As for the color of tape- color makes no different. The yellow is just an identifier for "thicker" tape versus the thickness of white tape.
