The main risk of doing it on "down low" is not that someone is going to rat you out to the health dept. but that someone might get sick and go after you with a lawsuit. Insurance won't underwrite you since you won't be using a commercial kitchen so you will have to bear all the risk yourself.

Actually not a bad idea, lady in New Braunsfel area does this with pies. Folks actually line up waiting for her to arrive at the side of the road she parks her trailer at.

Ya Twitter makes something like a rolling shop much more feasible. Just make sure you cater to the kind of crowd who would know how to follow you there.

Smile at home cake business

Yes, you need a licensed kitchen and a dba and liability insurance.

You can rent a kitchen at:
Kitchen Rentals at Independence Heights | Neighborhood Centers Inc.

I haven't used it yet so I would love to know if it worked out OK.....

Check out the cottage laws in Texas because you can have a home based cake business because I do and I have a sales tax permit and registered business. All the laws are different for it being home based

Recently, there are sure quite a few bakers selling cookies/cakes in their own home and advertise themselves on FB, the price isn't cheap either. Don't know if it's legal or not.
