It's a family. They own chain eateries.

Pappas was the Greek god of chain restaurants.

Pappadeaux = sea food
Pappasitos = mexican food
Pappas = ??

Personally, I'm not a fan but they do keep their restaurants insanely busy so they're doing something right.

I'm not as big a fan as I once was, but what they've done to Luby's is almost a crime. You couldn't pay me to eat at Luby's since the Pappas brothers took over managing the chain. The place was never fine cuisine, but it was a great cafeteria that served comfort food and did it well. Now, it's a place that serves over-priced cold food and has a service style like a cafeteria run by old alkies.

The best thing about Houston is that there are a myriad of places to eat well.

That's why you don't need to concern yourself about anywhere run by these people.

Those are Pappas related:
Pappadeaux Seafood Kitchen
Pappasito's Cantina
Pappas Bros. Steakhouse
Pappas Seafood House
Pappas Bar-B-Q
Pappas Burger
Yia Yia Mary's Greek Kitchen

In 2001, Chris and Harris Pappas of Houston's Pappas Restaurants (owners of Pappasito's Cantina, Pappadeaux Seafood Kitchen, etc.) joined the Luby's management team. Chris Pappas is Luby's CEO.
And now since Luby's bought Fuddruckers, Luby’s CEO Chris Pappas is turning much of his attention to Fuddruckers, which the company acquired this summer for the relatively inexpensive price of about $63 million.

Since the change, I do not eat at Luby's - I don't like their food anymore.

The Dot Diner, which is theirs also, is about the only good one.

Pappas can be found in 7 states, not just in the Houston area.

The wait staff was an odd thing they added to Luby's. I don't see why anyone really needs a waitress at a cafeteria?

Pappamias on Westpark was my favorite. Bad location though........
