I am aware that Central Market and Sur La Table offer this service, but I am looking for a place that does it the old-fashioned way - on a belt sander or whetstone.

I found a bunch of old threads on Chowhound asking the same question, but no one seemed to have a good answer, so I'm turning to this forum. I'm ITL, but would be willing to drive anywhere in Houston for professional knife sharpening.

Also, I know there's a guy who has a mobile service and he frequents the farmer's markets...but I heard that he bought the business from the original owner and is not nearly as good.

Any thoughts?

I take mine to Berings. I have no clue about the system they use, but my family has been going there for decades. I see no damage to the knives and it seems to do the trick

If you don't mind my asking, how much do they charge? Is it a flat fee per knife or do they charge by the inch?
