I recommend you trying some of the restaurants in Conroe, here's a few that I've tried and liked:
East buffet - Chinese
McKenzie - BBQ
Vernon's Kuntry Katfish - Excellent catfish
Taqueria Jalisco - Great mexican food
Margarita's mexican restaurant - Excellent fish tacos

And here's a few in Spring, TX
Sazon Latino - Venezuelan restaurant - not shown in google, but is in Spring Plaza
Taste of Pho - Vietnamese
Nadia's Mediterranean Grill - Haven't gone to it, but I'm going to because they have "shawarmah"

Capri on the other side of 45 for Italian, north of Rayford/Sawdust.

As far as the Woodlands goes, you have to look around the fringes for the older established moms and pops and/ or the start-ups who need the lower rents.

Actually there are those mobile taco trucks that do come to The Woodlands. Not sure where they stop, but they definitely are there.
