Had read about this place recently in the Houston Chronicle and decided to try it. It lived up to my high expectations (and even surpassed it.) It started out as a craft Chocolate store, but as part of the craft/local foods movement partnered up with a bbq aficionado who strived to create a new craft BBQ to compete with the likes of the best like Killen's and Franklin in Austin. They offer a great selection of quality local goods like District Nitro cold brew (nitrogen infused coffee), local (non-high fructose) root beers, etc.

The place is called "The Craftory" (aka Tejas Chocolate) in Tomball on Elm Street and it is the BEST bbq I've had in Harris County bar none.

High quality meat Excellent sauces & sides (try the Mole BBQ sauce!). Charming surroundings in old town Tomball. Everything to complete a very unique BBQ experience.

Gatlin's or Carl's. Killeen's is good but is technically in Brazoria County if I'm not mistaken.

Have you tried Roegells on Voss. (aka the pig on Voss) It used to be a franchised place but he broke off on his own and now it is GREAT!

Corkscrew BBQ just opened their new location on Old Town Spring and it's at the very least in the top 3, IMO it's the best BBQ in the Houston area. I've had all the normal top places that everyone raves about and none of them beat Corkscrew.
