My degree is in social work but I am fine with getting a certification in ESL.

I was an ESL assistant last semester

What other areas in Texas need ESL teachers?

That's good, I just said that because the main complaint I hear from people that move there is the lack of diversity. So depending on where you're coming from you may or may not like that.
