Mark's- Well because it's Mark's
Cafe Annie- Because it's one step below Marks
Da Marcos- Montrosian Italian with amazing dishes and wine
Bistro Provence- Hole in the wall authentic French by the creator of Chez George
more later, gotta hop.

By area...
I can't wait to hear what people have to say about their favorite eateries. Maybe people can list according to area since Houston is so large. So maybe people could list the top ones in their area.
Also helpful would be categories such as laid back to fine dining. Just some thoughts. I am looking forward to it since I keep reading how Houston has amazing restaurants.

I don't know if they are all Houston's best but they are certainly some of our favorites.
Mark's- great food and atmosphere and outstanding "special occasion spot"
Niko Niko's - tasty ; )
Barnaby's - reliable, large portions for the money, good salads
Ruggles - the one on Westheimer
Dolce Vita - love the pizza and all the unique small dishes
Backstreet Cafe - awesome patio and good food
El Rey - fast, authentic, and cheap...just how mexican food should be!
The Bank- one of my husbands favorite lunch spots
I'm sure I'll think of more later.....

Niko Niko's
Dolce Vita (sigh...)
Mark's
and I'll add Empire Cafe, which I love for the combo of good coffee, great food and great patio.

Barneby's - great food, great prices (montrose)
Perbacco - some of the best italian food I've had (downtown)
Mi Luna - food is ok but go there for the liveliness of the place and the music (W. University and Sugarland Town Center)
Gringos - eat the veracruz and you'll just fall in love

Mi Luna is a Houston Metro chain and average, IMHO. You cater to the burbs you go down in my book. Service is complete krap

OK, I'll give it a try:
Mark's - incredible food, drinks and atmosphere! Try any of their specials, bisque, any of their berry tarts and their Barry White drink and you won't be disappointed!
Smith & Wollensky - one of the best steak restaurants in the city.
Truluck's - very nice atmosphere and great seafood. Their garlic mash and soups are great!
Taste of Texas - great 'mid-range' steakhouse, awesome salad bar and the best Prime Rib I've had in H-town.
Rainbow Lodge - Solid food, great black beans (silly to comment on I know) and the BEST Bread Pudding you'll ever eat! Great lodge feel...
There's 5 good ones...

Fogo de Chao - Brazillian Churasscurrea - $$$ but unlimited excellent food. Must like meat. Although I'm a vegetartian and the salad bar was great too.
Perry's Steakhouse (Woodlands one) - son and husband loved the pork chop
The Grotto (Woodlands one) - I loved it every time we went. Coconut pie mmmm.
Tommy Bahamas (Woodlands one - I know I didn't get out much) mmmm the butterscotch pudding was awesome
