I like the burgers better than regular hamburger. I haven't had a steak to compare.

It has a slightly different taste - which I automatically think of as "better", because I know it is less fatty. I like the different meats at Fuddrucker's - and I do,too - for some of the same reason. It is just better for you - and the taste is good.

The first elk steak I ever had was in Bandera - and it was fantastic.

I've had the burgers at the Fud and a bison pot roast at Ted's Montana Grill. I'm not sure I'd say it's better or worse than beef, just slightly different.

A photo buddy of mine says he gets ground bison for cheap at HEB after the butcher section closes, and they sell what they didn't earlier at a reduced rate. (Never done this myself, yet)

Went to his place and he cooked me up a bison burger. Good stuff.

After having seen bisons close up in their natural habitats, their wooly hair all drenched with mud, I couldn't really enjoy bison meat anymore. I know same things can be said for pigs and cows, but they don't have the dirty long hair and I've grown up loving pork and beef long before I saw where they came from.
