Ohh food. I love food. Now this is a topic I can talk about all day long. Here are some of my favorite "expensive" restaurants:
Kirin's - great Indian food, but I feel like it's overpriced. I hear good things about Indika.
Brennan's - great Cajun food, but I'm pretty sure it hasn't reopened since the fire.
Qin Dynasty - only been there once for a wedding reception, but the food was probably the best chinese food I've ever had in Houston. The jury is still out on normal meals.
Benjy's - Great fusion type food and love the dessert...especially the white chocolate creme brule.
Voice - Everything is good. Great atmosphere. This is my second favorite restaurant in Houston.
Killen's Steakhouse - personal fav. Considered to be one of the top 10 steakhouses in Texas. Its' creme brule bread pudding was named the top 5 desserts in the nation by Food and Wine magazine.
Da Marco - Italian fine dining. Be prepared to pay lots of $$$.
Anyway, the next restaurants on my list are Reef, Textile, and Indika. I am still looking for a good sushi place and a good Mexican place (kind of feels ironic).

Here are some expensive and very worthy "non-chain" restaurants that can't be found outside of Houston. Google them and you might be able to pull up a menu. Keep in mind it will be average to drop over $100+ per person for dinner/drinks at these restaurants.
1. Cafe Annie (a Houston classic)
2. Marks
3. Tony's
4. America's

Cafe' Annie added Bar Annie....then steakhouse styled it down. Not the same IMHO. It did something to the atmosphere.
Marks', Tony's, Da Marcos, Feast (in the winter)..oh yeah and Trulucks remain my favorites. And a quick hit for flavot is Bistro Provence right around the corner.

I can help you out with a place to stay away from...Del Frisco's Double Eagle Steak House next to the Galleria. Spent almost $400 dollars there a couple of months ago for two people. Wasn't worth it. Got an appetizer for two that was like $130 that included cocktail shrimp, crab legs, and a little bit of lobster. That was a disappointment as there was nothing special about the way it tasted. It came out on an ice sculpture so A+ for presentation though. Bought a steak that was over $100 that came from Australia or something. I don't know what I was thinking on that one. I fell for the waiter's sales pitch I guess. The steak was very good, but I don't think I'll pay that much for a steak ever again. The steak at Sullivan's is just fine thank you. To be fair they had some cheaper steaks, but all of the ones I wanted were $50 and of course at these places, your entree price doesn't include the sides. I ordered asparagus, chateau potatoes, and a few cocktails. Don't ge me wrong, the food wasn't bad, not at all, but it was definitely over priced. The food in my opinion, wasn't any better than the other expensive (yet cheaper) steakhouses around town. Maybe I just expected more as a few people had really talked the place up to me. It was overrated in my opinion. I'll probably spend my money elsewhere next time I want a high dollar steak.

Del Frisco's is that extravagant? I just assumed a chain restaurant owned by a company called The Steak Co. (steakco.com) would be more like Saltgrass...alas :P
I don't conspicuously consume food, but I have heard good things about some of the restaurants in downtown hotels (Voice at Icon, 17 at Alden/Sam Houston, maybe?) and also Ibiza and Reef in midtown, and Ouisie's Table on San Felipe. I'd avoid chain restaurants and stick to something local and chef-run.

Ohhh I forgot about Ibiza, but it's not really what I would call expensive. Ousie's Table isn't what it used to be since they changed chiefs a few years ago. JMHO.
Anyone been to "The Grove" yet on Discovery Green?
