I know I'm going to get stoned to death or something for saying this, but quite honestly Tex-Mex food is pretty much all the same. It is so easy to make that it is hard to screw up. I would look for restaurant ambiance more than quality of food.

I actually kinda agree. To me, Tex-Mex restaurants (in Houston) are either Great or okay. All the suggestions on this post are great. I have been to some places that are just okay.
But everyone has their favorites whether it be for location, the salsa, happy hour, atmosphere, favorite dish, service, price, etc.

Spend some time in the Golden Triangle and you just might change your mind. I've had some absolutely terrible Tex-Mex here more than once. I also ate at a pretty bad El Chico chain in Oklahoma, and found out exactly why there are none operating in the Houston area. I don't really understand how some of these places stay in business. My wife told me about a really bad place in La Marque also, and my sister in DFW claims the options are much better in Houston.
I think what separates good from great are the smaller nuances such as blend of spices, the way the homemade tortillas turn out, homemade hot sauce, etc. As far as ambience goes, that's true. A small/noisy/packed place with families & kids... a family-owned & operated restaurant, smack dab in the middle of the barrio is what you want, hence my suggestion earlier in this thread.

+1 on Escalante - very good steak / carne asada. Also excellent Margaritas. Hmmm.... maybe I get my wife convinced to go there tonight - but I am supposed to be on a diet.

I'm beginning to drool now too! Forget the diet, it's on this weekend!!! If Houston has great/good Tex Mex and no good...I'm going to be in heaven.

Lupe Tortillas is in Spring area. Has good carne asada. Chuy's is a MUST. Get the jalapeno dip and anything on the menu. Have a few margaritas for me. I make a point to go there anytime I'm in Houston.
(Sidenote: I'm moving to the PNW and am excited about it. Though I think the housing seems fairly reasonable compared to So Cal. I'm from Houston though.)
