Not many. Those people were under guard to make sure they obeyed the rules, and regulations. Any one who was denied entry was put back on board ship, and sent back to their home country. It would have been almost impossible to escape the island, and make it to the mainland.
That did occur but I agree that not many of them got by Ellis Island. Progs just like to play that game.

They didn't make it easy to "stay when turned away", as jayarcy said, so not sure where you're getting THAT info.
Pogs can find things like that on most of their websites. Especially those who grew up in the period when their kind were providing the text books for elementary and secondary schools.
