Italy and Spain are not very Catholic. Only 38% consider themselves active members in Italy for example. 54% of Spanish Catholics dont go to church. 19% of the nation is atheist. So you can't compare Spain, italy and Mexico...since Mexico is more religous and more likely to take the teachings of the church seriously. 44% of Mexicans go to church every Sunday vs. 19% in Spain.

Still a dramatic drop from 30 years ago in Mexico.

I don't understand what race has to do with anything. How can a poorly educated Black (assuming an American) person get a different type of job compared to another poorly educated American of a different ethnic group?

unfortunately, the demographics have changed so much in some areas that a poorly educated foreign (typically spanish)-speaking person would have a better chance at a job than a poorly educated english-speaking person. i can point specifically to the citrus industry in florida where the managers speak spanish and prefer to hire spanish speaking workers over american workers. the government supports big business in this case, citrus, by helping them break the law and facilitating low wages so citrus can make a bigger profit. they will not investigate and they will not deport, and americans are being displaced, all for the sake of lower wages.
