North Liberty would most definitely be your best bet mostly due to it's location. It is in between Coralville and Cedar Rapids, and is right along 380 as well as Hwy 965 for easy access to Cedar Rapids and Coralville/Iowa City. It is small but growing, and is starting to become it's own city with restaurants, stores, etc. It has come a long way in recent years, but it is also starting to get a tad pricey too for the reasons I mentioned.

Also to address some other issues, you will most likely not run into many college students in North Liberty or Coralville. They are mostly confined to downtown Iowa City. Also, Iowa City IS a safe place, and those who disagree probably just don't really know what they are talking about. Just because some crimes have happened from time to time, doesn't mean it isn't safe. Most all the crimes committed are isolated incidents involving drunken college students and can be avoided almost completely by not going downtown on busy nights or weekends. Young women can walk around at 3 a.m. by themselves almost anywhere and nothing will happen 99% of the time. You can leave your cars and homes unlocked and again 99% of the time nothing will happen. If that isn't a safe place I don't know what is. I have never once not felt safe in the Iowa City at any time.
