Bethany is Exit 92 off of I-35 in Missouri, and is pretty much directly between Des Moines and Kansas City. I used to travel to Des Moines from Kansas City at least once a month, sometimes more, and I have been to this diner. It's good, fast, and cheap. You can get in and get out - even hit up the gas station - and be back on the road. If you are looking for a chain restaurant (Applebee's, Panera, Etc.) you will have to stop in Des Moines, because between Des Moines and KC there is nothing but small towns and farms.
Good Luck! It's not the prettiest (as in scenery) drive, but it's not the worst!

Actaully now that I think of it, I would suggest Iowa Beef Steak House. The place is outstanding.

There is a nice diner called Ma & Pa Kettle's(like the old tv show) in a town after you cross into Missouri. I can't think of the town name but it is about 45 miles from the edge of Kansas City. They have good food and reasonable prices, really cheap coffee. There are signs on the interstate about 30 miles out. There is also a Antique store just down the road from the restaurant.
Winterset is about 15 miles off of Interstate 35, straight east.
Tasty Tacos is a great, cheap place to eat. I highly suggest the Original Flour Taco(about $2.50) and the Pepper Rings(comes with cheese sauce for dipping). There is one just off the Euclid Exit and about 6 blocks East.

That would be a good idea, except St. Joseph is off I-29, and if they wanted to head to St. Joseph it would be a 30-some miles from I-35 through Cameron (if I remember correctly). I don't think they would go that far out of the way to get something they could get in KC once they get there.

Wow that must be the cheapest thing on the menu.
I stopped at one in Louisville, KY and I almost got up and walked out after I saw the menu prices. You come in expecting small town diner but get big chain prices. The food was good, but no better than a mom and pop shop.
