Is there anything in the Islamic religion that would explain a Muslim nation refusing to accept the existence of Israel as a Jewish state?
There is no need to ask such a question when a State called Israel already exists. Such a question is designed to refuse existence of a Palestinian State so that the existing State called Israel can be gradually expanded into a much larger Jewish State.
The real question should be:
Is there anything in the Jewish religion that would explain Israel's refusal to accept existence of a Muslim Palestinian State?
In terms of religion, rather than in terms of politics, the holy land was not given to a group of people on the basis of being called "Jewish" or "Jews" (a genealogy) but a group of people who obeyed the Commands from God (submitted to God). Reference to this fact can be found even in the Torah. On that basis, Jewish people who obey God can live in that land along with all those who also obey God.
Now to answer your question, there is no mention of a "Jewish" State called "Israel" anywhere in the Qur'an.
That the quran doesn't mention Israel hardly shows that there isn't a religious dimension to refusing to accept Israel's existence.
Actually, there are no religious dimension to refuse acceptance of Israeli State unless rights of Muslims in that State are denied. But on the other hand, there ARE religious dimension for Jewish people to refuse a Muslim Palestinian State.

Right now it's the leaders of the proposed Palestinian State who refuse to negotiate with the Israel State in order to become a Palestinian State. They continuously call for other states to force the Israel State to accept all conditions of the Palestinian State for this to happen. Three major wars from outsiders, won them nothing and lost them more. The Israeli State gave them the Gaza Strip, The Palestinian State gave the Israeli State war in return. The Palestinians continuously sing "From the River to the Sea", The Israeli do not.
Right now, only Israel is refusing to accept Palestinian State.
