To be specific, Waitr (https://waitrapp.com/) is kept busy schlepping Wings from Boston Fish Supreme, over on Junior Lynch (J.R. Lynch, to the uninitiated). Having never eaten a Chicken Wing, I was curious about this apparently-very-special place, and a quick google yielded a picture of their celebrated Chicken Wings, swimming in sauce and kept company by a flock of fries: https://www.yelp.com/biz_photos/bost...Um9Nuhg659ESYg

But also near the top, is CRAB RANGOON, from Mr. Chen. Considering that most Jacksonians pronounce 'Crab', with a 'p' where the 'b' should be, I'm sure that Mr. Chen's staff has a merrye olde tyme, taking orders for their most popular dish. Having been Vegetarian until recently - and with Crab being decidedly unkosher, anyway, I've never tasted it. But the Gentiles in our crowd steam crab on beds of Lemongrass and Thyme, or braise it in booze - neither of which sounds particularly Jacksonian. Those chicken wings should be surrounded by crime scene tape. Move along, folks. Let's show a bit of respect. You've never eaten a chicken wing? Not even one that came attached to a chicken body? When mom put a baked chicken on the dinner table, the sib's and I cleaned up that carcass better than a wake of vultures. "Who wants the neck?"

I ate my first wing, sans body, around 1970. My older brother discovered a place which served the trending basket of Buffalo wings. We lived in PA, so that wasn't a stretch. He bought them to take home to eat while he was watching a movie or football game on TV. Aren't we supposed to shove food in our pie hole while we passively watch people doing things? He was the one who always wanted the wings, gizzard, and neck.

There's been no crab in Crab Rangoon for at least thirty years. They used to be a tender pillow of creamy crab filling, and were quite tasty. Now they're just a piece of fried dough with a dab of cream cheese.

What caused you to fall off of the turnip cart? When I was vegan, I began craving cheese. When I went back to being veg, I wanted fish and seafood.

I’m sure most people in Madison have at least a passing familiarity with chicken wings and crab Rangoon, if they have eaten at a “Chinamerican” restaurant.

Yes, those wings look, to me, to be coated with motor oil. And a lot of the shots of the "sauce" on the fries, remind me of other brands of motor oil (I've always saved 'smears' of the oil - before and after - never trusting the mechanics to really be changing it... and, when we were young, actually added oil to our ancient Volvos, sometimes, so I know about these things).

We didn't have 'facilities' for frying chicken, when I was a kid. We didn't have a skillet, for one thing. If, when they lost "The House", a skillet was saved from the kitchen, my Mom, or my Grandmother, or my Great-Grandmother, would have traded it for a pack of cigs. And I don't think that the wood-burning stove heating our 2-room shack, was in good-enough condition to support a skillet, anyway. I cooked in a (cracked) iron pot, over a fire in the yard. My Grandmother and Great-grandmother knew NOTHING about cooking, having run a brothel (you know, "The House", where they had maids for doing menial things), until the Mobsters came up from New Orleans, and subjugated them. And my Mom, who was still hooking, when she was sober enough to turn a trick, didn't know how to cook very well, either.

My experience with chicken, came from the brief periods of thralldom, when Mom managed to convince some poor sucker that she'd "found Jesus", was "clean, now!" and was going to be the girl of his dreams. So, I'd have a "new Daddy" - sometimes for almost a week - who'd drive us to an actual town, where there was a drive-in, and I could have anything I wanted. I wanted drumsticks, until I discovered breasts.

And there was fried chicken at the Pentecostal and Baptist revivals. I don't remember wings. People wanted to give "The Little Indian Girl" a drumstick, of course, but I'd grab a breast, usually, if I could, and sneak-off under something to eat it - like a cat does, when it catches a rat and doesn't want to share it. We went to all the revivals, since they were great places for Mom to "meet men". The transcendent quality of revivals meant that "all are welcome" - even untouchables like us. A couple of times, my Grandmother even got lucky, and snuck-off with an old john from her glory days, to a vee-hickle parked in some peripheral spot. This was the Seventies, and vans with tinted windows, were all the rage.

So, chicken was not part of our quotidian existence, at all. Instead, it was associated with our brief and rare returns to luxurious living.

Thanks for that information about the Crab Rangoon. I was wondering how Jacksonians could afford it. Now I know: no crabs involved! Initially, I assumed that Waitr was primarily delivering lunch to law offices. However, I've been informed that the bulk of the deliveries are to students at Jackson State University, a school so rough that Brazilian students were EVACUATED, due to on-campus crime (Departing Brazilians Detail JSU Thefts | Jackson Free Press | Jackson, MS), while packs of wild dogs menaced the student body (https://www.wapt.com/article/jsu-iss...ampus/12447686), whenever said packs weren't over at the nearby Zoo, eating the animals (https://www.google.com/search?client...illing+animals).

Bitsi, who unlike me, failed to resist temptation, and bought a couple of ornate old Downtown buildings, set me straight: "Deliver lunch to LAWYERS? In JACKSON? Angelwing, the lawyers are all done GONE - mostly to Dick's and Buster's buildings on the Parkway! Oh, and we ceased to be Vegetarian, when we got old and gassy. The children are horrified, and are closer than ever, to being totally Kosher Vegan Rawist. But being big-ol Farti Havartis, is not good for business, and so we're getting our protein from meat (while feeling guilty about it).

The difference is, in Madison, there's actual Crab in the Crab dishes. There has to be: the city's mandatory cameras would document any withholding of the Crabmeat, and a lack of deliveries by the seafood trucks: https://www.wapt.com/article/madison...uences/8479393

There's a camera at every entrance to every business in Madison, documenting every person and every package, entering and leaving. Verily, considering that Plaintiff Law has brought more money into Madison County (https://cotedetexas.blogspot.com/201...ssissippi.html) than has even the gargantuan Nissan plant, Crab-cheaters would surely be in a heap-o'-trouble.
