Hi PinoyDoc
I started a new thread called Dim Sum - Yum! and in that thread we talked about price and experiences at Bamboo Creek.
To answer your question:
1 - It is standard fare - wished there was more but I may be dreaming as I am expecting NY standards but there was tripe, chicken feet, I'm pretty sure i saw some char-siu pao on a chart and siu-mai was pretty good
2 - Yes, they have your traditional dishes also.

Some friends at work told me about Bamboo Creek Bistro so I tried it today. The menu seems pretty standard for dim sum and I didn't notice if they had jelly fish.
My daughter and I tried the bean curd roll, char siu bao, pork dumplings, sticky rice, shrimp cheung fun and steamed chicken feet. We use to live in Atlanta and we use to go to several very good chinese restaurants (Hong Kong style cuisine). Most of these dishes were very similar, but the steamed chicken feet could have been a bit more tender. We will go back again to try some of the other dishes and also try the regular dinner menu.
We have been going to to Silver Star on Blanding for dim sum, but I think Bamboo Creek is better. I also want to try Hong Kong Bistro on San Jose since the menu that I saw on the internet was similar to what I am use to at Canton Cooks in Atlanta.

...moved away from Jacksonville 2 years ago, but while we were there there was a really good restaurant in Mandarin. It's on San Jose blvd at the corner of Loretto Rd in the Winn Dixie shopping center. You can order off the menu, or eat from the mongolian grill, or sushi bar. I'm sorry, but the name of the restaruant escapes me right now.

Do you mean China Buffet? Went by this afternoon and they were out the door waiting to get in.

For the best and freshest Mexican food, I recommend Rosy's Mexican restaurant in the Mandarin Crossing Shopping Center near the Lowes.
For really good Asian food I pick Jade Bistro .This was some of the tastiest food I have had recently. Everything was above normal from the appetizers, (coconut shrimp, and crab Rangoon), egg drop soup, and the Fried eggplant with chicken was so good I have to go back!! Service was also very good. We finally got to check this place out, on two consecutive weekends
The bottom line... the best, freshest dimsum in the area. Just recalling the experience makes my mouth water! 
However, while they have traditional dishes, I still find that (as of last 2 weekends ago) there are more a la carte choices at Hong Kong Bistro.

Okay, we will have to give Jade's Bistro another shot. Three of us went the first month that they were open and all of us felt that it was nothing special food-wise. None of us has returned. It was beautiful decor-wise.

I was going through some old mail, and found a mailer (with a 20% off coupon) for Jade's Bistro. I was going to try it. Maybe not.

If you want the real deal go to Hong Kong Bistro, they serve more traditional comfort foods. Jade Bistro is more like Jackie Lee/PF Chang(wannabe).
HIF, have you been there yet? Honestly it blows the wok off other Chinese restaurants in town.  Their chef is awesome. If you're not sure what to order, ask some Asian foodies around you and look what they order.
Only thing I hated was the upsale of their $26 peking duck. Great if you're with a group of people that never had it, but order other stuffs too! $26 is really a lot for peking duck, and the one at Jade bistro is even worse...I got pissed off when it was so bland and small portion, it's like they bought pre-packaged COOKED ducks.
