Are builders allowed to change the price of a home after you sign the contract? That's one of our concerns with doing new construction. As mentioned in my other post, our maximum budget is $225k. Is it possible that we could find a floorplan that works with our budget and then right before closing, they raise the price or something?

No, they are not allowed to do that. Your price may go up some depending on the upgrades you choose at the design center but other than that there is no way for them to increase your price once you have an executed copy of the purchase agreement you sign.

You can also ask to visit the design center BEFORE you sign your contract, so that you know how much the upgrades all cost.
