I agree with the comment that you NEVER say anything bad about your current job. So I always say that I'm happy with my current position and wasn't originally looking, but that I heard such great things about [interviewing company] that I didn't want to pass up such a great opportunity. I match my skills to the posted job description and talk about how I'd like to work there for many years. I mine my contacts to see if I know anyone who currently or previously worked for the company and reach out to them for information, so that I can provide specific examples of initiatives or programs that I respect and am especially excited about.

Im typically brutally honest, and I come out and say I am looking for the right company culture and size of company. Those are my motivating factors.
It depends if you are a fan or even just a follower of the company, mention your experiences with them and say this is what you want to do. This also works for specific roles as well. I found it has worked several times I've done that.
