as you get older, unless it's a job relevant to the position you are applying for, they no longer have to be on the resume. I will always go no further than 10 years.
Yes, I dont' think leaving a non-on topic job off your resume will hurt. Personally, if you include jobs that are not related to your field, the interviewers will often smirck and make commenst like you have a very eclectic resume, hum hum hum
So, it is better to have a selective, focused resume. It is also good to have someone you respect look at it, particularly in this economic climate. If you inlcude a reference who is not on your resume, I don't think is confusing to the potential employer, but you might want to included a one sentence descrip on your reference page.
