While I seriously doubt the scientific validity of the psak (halachic decision), I do respect their right to make whatever gazeiros (Rabbinic prohibitions) that they see fit to make, and I'd go so far as to say its daas Torah.

Fair enough. Sounds pretty ridiculous.

So if hypothetically this were true, there's no overarching authority that would condemn this decision?

There is no Jewish pope.

But there is a Gadol Hador that Torah Observant Jews will listen to.

As TFF just said, there's no hierarchy in Judaism. Practically speaking, all orthodox Jews are educated in Torah or are surrounded by people who are, so it's easy to recognize when a figure of authority is off-base. The media loves to portray us as sheeple, but we're quite discerning.

Every Jew should have a Rabbi/mentor just as the Mishna says. Having a mentor/Rabbi is not confined to Chassidush. Litvaks have them, too.
