Do you mean matzot?

Matzot are unleavened bread eaten by Jew during the holiday of Passover.

And what is the point of making the passover-bread without yeast or leavening agents ? How did that originate? Thanks

It originated during the time of Passover. The Hebrew slaves did not have enough time to let the dough rise in our flight from Egypt.

HaShem commands us to observe the week long holiday of Passover every year to commemorate delivering us from Mitzrayim (Egypt), the House of Bondage. One of the ways we celebrate the Feast of Unleavened Bread is by eating Matzo and not eating grains, breads, leavening agents and in addition for Ashkenazi Jews, kitniyot.

And who is HaShem? I have also read that Matzot symbolizes dried tops of the Fly-Agaric mushroom. What do you have to say about that? Thanks

Yes.

HaShem is Hebrew for "The Name". It is a name of G-d that some observant Jews use (Adonai is used in liturgical settings).

It's the informal salutation used in reference to g_d. The formal salutation is adonai.
