I would just point out that none of the songs mentioned in the original post are religious. As a Catholic I consider them secular songs. Yes, they are associated with Christmas but I would argue as a secular winter celebration rather than a religious holiday. You could sing all these songs, eat a “Christmas” meal, exchange gifts and never darken a church door or pray - a very secular celebration IMHO.

I'm not so sure it was pure assimilation as it was:

1. Gotta earn a living,

2. Making us more acceptable to the Christians. Also, making a song to soften sentiment and promote positive behavior during Christian holidays probably makes them safer for us in the long run.

Because so many songwriters of that era were Jewish, period. You might as well ask why so many classic love songs were written by Jews (far more than the Christmas songs)
