I came across this website and though I would post it since many seem to wonder what might be interesting to see in Kansas, although there is a choice of states: Kansas Archives | Only In Your State I can't say how good or reliable it, since I have not done that much looking at the areas that I am actually familiar with.

Funny! I heard that also before coming into the state and that was far from the truth. We now live on the front porch of the Flinthills. I have been as far west as Hays and it definitely gets flatter going west. The Flinthills is my favorite area of KS: https://www.travelks.com/flint-hills/

That's correct; and heading eastward there are more 'hilly' areas as well.
