Another stop on the I70 cooridor between KC and Manhattan is Wamego. It has the Oz Museum (kind of kitschy), Columbian Theater (original artwork from the Chicago World's Fair), and some nice stone buildings. The 4th of July celebration in Wamego is the largest in the state, with a big car show, carnival and free fireworks display.

Medicine Lodge has a Peace Treaty every 3 years and the beautiful Gyp Hills.
NW part of Kansas.. Wilson Lake and Lucas with it's weird Garden of Eden. Dodge City is putting in a casino.. also they have Boot Hill.
We had fun in Topeka this weekend. Drove over to Lawrence and spent some time at the KU campus and Mass. St ate outside, toured the shops.
Gage Park in Topeka, swimming, train ride, carousel, and zoo made for a full day. (inexpensive too!)

This is an AWESOME SPA ( i so love this place).... hidden near Hays KS. http://www.rockhavenspa.com
Hays has a great water park, frisbee golf, the spa, and of course Ocktoberfest.
You can head over to Hays after visiting Lake Wilson and Garden of Eden!

We stayed at a hotel in Ozark, Mo. just last week. It's right off hwy 65, south of Springfield about 8 miles. From Topeka, it's about a 3.5 hour drive, including bathroom stops. It is quite lovely there... so much so that I've been trying to convince my husband that we need to relocate there.
It took us less than 30 minutes to get to Silver Dollar City, if that's something you're interested in. A tip about that, if you buy your admission to the park after 3:00 pm, you get in free the next day! The first evening after the park, we decided to drive through Branson, just to see it (I'd never been, but my husband had). It took 45 minutes to get from one end of town to the other (just a few miles). The traffic was horrendous. So, unless you like that, I recommend avoiding it altogether.

COL in southern MO can be even lower than NE KS. However, I have heard the wage scale tends to be lower in MO. However, the scenery is quite nice so that might make up for it.

Have you been up to Omaha? People laugh, but its actually a nice little day/weekend trip. Different things to do for different people. You'd be surprised. Zoo, Casino, minor league baseball, shopping, eating, museum.
Living in KS is somewhat paradoxical - you are in the center of everything, but you are close to nothing. St Louis is a couple of hours a way, but for some reason, its just not as exciting to travel east to see the Gateway to the West as it is to travel west to see the Gateway to the West.
Chicago, Denver, Minneapolis and Dallas are all ~500 miles, ~8 hours. Oklahoma is ... well lets just say that Wichita was a welcome sight after each foray into OK, and Wichita blows.
Two places I've been curious about: Branson, MO and Fayetteville, AR. I've heard good things about both. I honestly don't know if I can do Branson, though. It just sounds like Disney Land for country music goobers and 80 year olds.

The only thing I know about Branson was the day I learned it existed. I was at an airport in Washington waiting to fly to someplace even worse than Missouri (Orlando). A whole bunch of retired Cletus/Murline folks were waiting in line, bigger line than we usually get, had something in common. So I asked one if this was a tour, and if so where was it going. 'Branson,' they said, as though that explained everything. I had to ask what they were hoping to find in Branson, even what state it was in. I am sure that Cletus and Murline thought I was very ignorant, and I suppose by their lights I was.

The area around Branson is absolutely gorgeous! I'm not into paying over-inflated prices to see "country shows", when I don't like country/gospel music. You can't do anything there without paying less than $40/person. No thanks! Branson, itself, was very unimpressive, as a town. I was surprised by how small the show places were. The strip is full of cheap looking hotels, plucked right out of the 50's.

Be prepared to leave with a doggy bag! You'll never be able to eat everything on your plate!

You can rent houses or cabins on Table Rock. We go down every year and only once we went into Branson. Once was enough. They would have to pay me to go see the "BaldKnobbers"
