How about Garnett, Lecompton, Holton, or Concordia.

Lecompton and Holton are good suggestions, with small cities nearby, if rural life gets to be too much for a city girl.

Try Pratt, Kansas. It's not too far from Wichita - in case you bug out with nothing to do! It's a charming town with some basic necessities. A little bigger would be Hutchinson and it has several touristy things to do.
You could come here smack dab in the middle of nowhere and watch the wind blow.

I don't know what Lecompton has, but Perry (just north of the river and west a mile or so) has a B&B. That would be another place to put on your short list. You can't get much more rural than Perry (sorry, Perry folks). Other than that, I imagine you'd have to find accommodations in Lawrence. Holton has a few hotels and B&B's. Holton's Hotel Josephine always looked interesting to me. Good luck in your search. Hopefully, you have the rejuvenating vacation you're looking for.

melissaca25 - how old are you? Does your name mean that you're 25? I was just thinking if you're young and wanting to be around younger people then Lawrence, which is a college town, is a good suggestion. You could fit right in with the college students and have them show you their hangouts, etc. 25 is not too old for that, either, as there are plenty of graduate students, etc. in Lawrence.
If you just want small town life, not a young crowd, then a lot of the other places mentioned are good suggestions.
Since you are from LA, though, I'm thinking even Kansas City might seem "rural" to you!
