I drive on 69 Highway from KC to Pittsburg quite a bit. It's almost 4 lanes the whole way now!
Rest stops ... hmmm ... No not really. About halfway is the little town of Pleasanton and there is a convenience stop there that is handy and enough room that you could get out and walk her around a bit.
Same deal at Louisburg exit along with a couple of fast food options. More places to stop as you get closer to KC, but they will be busier and have less grass around them.
