Cool! Yeah, Barb is a really great lady. And she is an incredible baker! Tell her an old neighbor says hi! :-)

I am laughing at this post. I am from a family of New Yorkers and love me a bialy! They are hard to find outside of NYC, South Florida and other Jewish hotspots. Just so you know I have never been to Kansas (I was just searching around C-D tonight), but I think there is a Whole Foods in the Kansas City area. See if they have bialies with their bagels in the bakery section. Our Whole Foods here in Northern Virginia carries them, and they aren't bad. They're not NY bialies, but you make do when you are not in New York. Good luck to you. I hope you find one! Then you can educated your fellow Kansans about bialies! :-)

Hi Samantha! Otay, I have not been able to get over to Barb's bakery but I just spoke with her over the phone and I got her e-mail address. I told her that I can send her a link to this thread discussion, and so she will be able to see how this thread started and everything. Plus she can see the recipe you posted....it looks hopeful - maybe I'll be munching bialys pretty soon, you never know. She sounded like a wonderful person too.

Yeah! I have never had a real NY bialy but I know what you mean, the best pizza I ever had was in Long Island one time. They say it's the dirty water that makes the dough so good. But, I will try the Whole Foods store - there is INDEED one of those around here.
Yum!

I am going to try to make it over to this place today:
New York Bagel & Bialy Corp - Lincolnwood, IL
It's pretty close. We don't get home until the 1st, but if I can, I will try to bring some back with me so that you and Barb can try them. ;-)

Okay, we went over there this evening.
First of all, silly Samantha, it's "bee-AH-lee" not "BY-uh-lee"
Second, they are REALLY good! I think they would be a great addition to any bakery, especially one that sells bagels.
I like bagels, but I like these even better!
I don't think I will make it back there, so I bought a few extra and put them in the freezer. I will bring them home and try to find a way to get them to you or Barb. Hopefully they won't lose too much flavor/texture by freezing.
Good call!

Wow, what a sweetie you are! (I have my wife's permission to say that too). Hmm, I was kind of wondering exactly how to pronounce "bialy" too...thanks for clueing me in.
Yep, same as me....I like bagels, but I like bialys even better.
I sure hope Barb decides to at least try a test batch of them...

Boy, I sure do sympathize! I grew up in Skkokie, a predominantly Jewish Chicago suburb, and bagels and bialys were my favorites! I think KC could use a really good Jewish deli!! Unfortunately, I couldn"t open one because I'm Italian and Swedish!
