Have you thought about areas near Bowling Green? It's about an hour from Nashville which fulfills your airline req, and plenty of farmland and horse stuff to do. Not too far from Louisville either, and there is amazing horse trails on the Mammoth Cave property.

There is also Beech Bend park down there which has nice camping area, as well as the dirt track racing and a cool little amusement park if you like rides of that sort.

If you are set on the Louisville area, check between Louisville and Owensboro, there are nice areas there and land is pretty cheap, IMO.

Honestly, I think Paris is one of the most beautiful towns in central Kentucky.

If this discussion is still open, then may I recommend Leitchfield, Kentucky, in Grayson County. That is 1 hour from Louisville and 2 hours or so from Lexington. My family owns a decent sized house in the next town over (2100 sq. ft) that was about $175,000 when purchased in 1999. So basically, houses and land are extremely affordable. There are many acres to be had in Leitchfield...heck, nearly everyone owns at least 10 acres! There are no big shopping malls (only 2 strip malls), and only a few places to eat (fast food mainly.) No movie theaters, no nightlife whatsoever. It's a quiet, peaceful town that's very rural. It's got about 6500 people, and the majority are super friendly individuals.
