Hmmm...these Burgoo/Bergoo recipes sound exciting & yet varied, what to add or not, one says dry red wine, Worcestershire, & a dressed rabbit? It sounds like leftover stew at my house, but I don't know where to get a dressed rabbit here in So Cal. As for mutton, I would probably get by with lamb shanks or chops. I'm guessing, because of the difference in recipes, bergoo was what you probably made with what ever meat & veggies & flavorings you have on hand. It sounds like it's origins go way back. Now I need to fly out ther & try some this summer. Does the rabbit have to dress formal, or casual?

Most of the meat is BBQ'ed first, rabbit and other game meats can be smoked, broiled, stewed etc. There are 1000's of Burgoo variation but the end product is always very Burgoo-ish and not stew, while it will have a thick stew look to it the taste is quite unique.
Somewhat spicy, but not to spicy in most cases ... I'd say burgoo is kind of like chili, a lot of people (around here) make it and it's all different but you know it's burgoo. Does that make sense?

Yes Indeed! Thanks Davart. It looks delicious, & I comin' ta' get some! I have looked at a Burgoo recipes on line. I'm not to keen on critters, but can handle rabbit. I do like Mutton, Pork, Beef. BTW, do 'yall get Turkey Gizzards out that way? I love em' fried & bacon wrapped.

Fried & bacon wrapped, that would be a variation of ramaki, fried gizzards and livers (mainly chicken) is quite popular ... I had them for lunch today.

Most commercially sold burgoo is made with BBQ however a lot of homemade often has game meat. Since restaurants can't legally sell game meat that is not USDA approved they use pork, chicken and mutton instead.

I want it all, Burgoo, Hot Brown, Derby Pie, & a Mint Julep!!! Oh, I'm landing in Maysville on May 25th via Amtrak, hope to arrnage a car rental & drive across KY. Lexington, Louisville, Kind of follow my nose. I want to know what distilleries to check out to sample the Bourbons as well.
