Yeah, true, but there are a lot of whites are on food stamps too, -and Kentucky is a mostly white state with a lot of poverty. Food stamps are also sure not any way to live on their own. -They sure don't pay the rent.
Also, remember, we did have welfare reform so just living off the public doll long term is not an option for most, -and that's a good thing.

Burgoo
I believe that burgoo has traditionally incorporated rabbit, squirrel, venison, and quail when available. Actually, just about any kind of meat, including O'possum. Some posts goodnaturedly refer to burgoo as Kentucky roadkill with vegetables.  If you ever get the chance to dine there, the old Talbot Tavern in Bardstown serves a tasty version.

Speaking as a minority who got fat without ever drawing public assistance, my vote for a signature Kentucky food has to go for the Hotbrown Casserole. Max's Loudon Square Buffet, in Lexington, makes a truly credible version, but the one I remember best used cheddar cheese ,instead of Velveeta. Let us not forget the inimitable Kentucky Silk Pie, with all that heavenly chocolate!

I don't think I have ever met a woman here that can't fix fried chicken or cornbread...I love them both. Not to mention. Fried Patatoes....yummmmy!!

I thought this was about Kentucky's signature foods, NOT trash mouthing the state! Although, your statements may be true, why would you want to talk so much trash here, when the original thread was about signature foods. Not the condition of the State and its people and the job market. I know, I know, next you're going to tell me that it all relates. But still, come on, this is the Bluegrass state! Are you native of Kentucky, you know, born, bred and raised true blue?
And, just for the record, my dad's family was from Jackson, KY, and are decendents of the McIntosh family. And they did call bean soup, "soupbeans"!
It all depends on what your mama called it when she made it!!
I am personally very close to and know and a very well known, very reputable wealthy business man in Lexington who does NOT have a college degree, and guess what, he owns part of the city. He has never been on food stamps and is not obese, but has worked very hard all his life to get where he is today. So, you might want to be a little careful with your remarks so you won't step on too many toes! We are all nice people here. Please understand, I DO, and I repeat, I DO respect your opinion, which is of value and is your perogative, but please respect others by choosing your words a little more carefully. Ok, I'm off my soapbox now.

I agree with you sir, I live in extream Eastern Ky. Pikeville to be exact...Yes some people get foodstamps, but you know what. What does it matter. These poeple also( although some don't) have jobs and familys to support...They do work and still can still sometimes be hard to get by. That does not mean they are obese or anything..I myself do not get foodstamps but there was times that it got hard and wished I did, but I don't have the heart to do it..I can't complain my husband has a good job, but I have 3 kids and a foster daughter. That can be alot of mouths to feed, but I somehow make it..Thank you for your input.....But to end it on what the thread is about. My mom makes Apple Dumplings. Its her own thing she came up with years ago and man they are delicious...
