But that trip isn't a "must-be" on my agenda and something I would definitely do in good weather only - maybe I should rather stay in the Tri-cities area and explore the parks there more in detail (I like walking!).
FWIW, Cumberland Gap NH Park is a wonderful place but it's a pretty good drive from Kingsport (80 miles and about 100 minutes). The best view is from Pinnacle Overlook which has an elevation of just 2440 feet.

Just a suggestion: For a true "mountain park" experience, head up to Roan Mountain. You can hike the world-famous Appalachian Trail over the mile-high balds and have amazing views in all directions. Most hikers park at Carver's Gap on the Tenn./North Carolina state line. From Johnson City, the drive to Carver's Gap is only about 40 miles (55-60 minutes).

Another wonderful hiking option in the mountains is Grayson Highlands State Park in Virginia. From La Quinta Inn in Bristol, the drive is 52-58 miles and about 65-70 minutes, depending on which route you take. The hiking trails above Massie Gap are in an incredibly beautiful setting reminiscent of Wyoming or Montana.

The extended stay place someone mentioned is right of of I26 in Boones Creek and is called Value Place. It's very new and I've heard good and bad about other Value Place's so it's hard to konw. There's also a Jameson Inn there. I've only heard good things about it. It's a great central location to all of the tri-cities, plus you can walk to Waffle House or Cracker Barrel, or drive 2 seconds to Bob Evans.

Thanks to everyone for their suggestions! I've put Roan Mountain on my itinerary - those pictures on the website-link look phantastic!
