There's a nice new hospital in Jefferson City, about 8 miles or so up Hwy. 92 from Dandridge. It's an affiliate of St, Mary's in Knoxville- pretty big operation for that area.
Shopping's just average. Knoxville, Sevierville, and Morristown are all close and offer more choices.
Dandridge is a quaint town. I lived there for a couple of years and made some great friends there. Having said that, however, I'm compelled to caution you that it's hands-down the most clannish place by far I've ever lived in or visited. If you're not from there, you're never going to be 100% locked-in.
Just my experience, but it was definitely the case for me!

I don't think one can make much of a comparison. Dandridge is a little town which has one supermarket, Johnson City is a regional hub with a nice mall and just about every kind of store imaginable. There's no hospital in Dandridge but several in Johnson City including a medical school and a giant VA hospital.

Don't get me wrong, I think Dandridge is a lovely little town on the banks of a beautiful lake (I posted pics of Dandridge a couple of months ago--you can do a search for that here and find them). But if you want to be closer to medical services and shopping, Johnson City wins hands-down.

I am going to echo JMT here.
I lived in Jefferson County (Dandridge is the county seat) and I now live in Washington County just north of Johnson City. Johnson City has some great top notch hospitals and Dr.s. For me and my family it is Johnson City hands down. But that is us, your perfect spot might just be Dandridge. Tell us a little bit more about yourself and why you are looking at those two areas and what you are looking for in a town and maybe we can answer the questions better for you? Your best bet though is to come and visit both, we can give you our opinions, but only you can decide what is right for you.
