i am moving to knoxville in two weeks any one out there can tell me about rooming houses i am in my 40s and travle light coming from north dakota looking to rent out a room by the week any help on hotels or rooms for rent

I've seen apartments that rent by the month, as well as rooms for rent, on Craigslist, you may want to check that out.

When I was there visiting, there are plenty of business hotels with kitchenettes, like Residence Inns, Homewood Suites, etc. No shortage of those from what I could tell. :P
