Wondering if anyone in Knoxville would be interested in teaching me how to shoot and fish. I never learned growing up and I would like to have these skills but I don't really know where to start.

Here is something for fishing I found with Google: How to Fish for Beginners: Preparing Supplies and Catching Fish

For shooting, visit some local gun shops and ask about training course in you area. I highly recommend a paid training course that follows NRA guidelines. You don't want "bubba" teaching you how to handle guns and shoot.
