My peppers have really taken off. I have been roasting and freezing them like crazy. Chili verde will be coming soon.

I make a chili verde, or green chili stew. It's pork, green chilis, tomatillos, onions, garlic, some other stuff and cooks all day. Usually better the next day. Served with rice and cold beer (or iced tea). When I make it, I make about 5 gallons at a time

Oh Barking Spider, will you adopt me?!?!?! Or at least roast me some chiles and sell 'em to me?
We just came back from New Mexico and i'm not happy with what i'm finding here canned. I find that either i'm dousing everything in green chili or else serving it on sopapillas since then. ;-) |

I can't tell you how much I empathize with your sentiments. My family lived in New Mexico for 20 years, and I spent my entire life there until we moved to Knoxville a few years ago. I miss all of my friends in NM, but I might miss the great food the most! My mom finally broke down a while ago and ordered some green chile from Hatch (which is, of course, famous for said green chile). The smell of chile peppers roasting is very nice, indeed - it reminds me of fall in New Mexico. The chiles look good, BS! I may have to hit you up for some of the stew - sounds awesome. |

OK, Barking Spider now has a sideline biz. Instead of Newman's Own, it'll be Barking Spider's Gallopin' Green Chili Stew. Put me down for a couple of gallons.

Oh, no, I'm used to naming things. And I'm always front and center at the craft services table, too. It's a thankless job, but someone has to do it.
