Moving to Knoxville area.
We live outside Spokane Wa. and have a small Organic Farm, we would like to get outside of Knoxville and have our farm there. is there any special areas that would be better than others for raising some organics (chickens and vegetables, possibly some Beef) and have Green pastures? we are paying $300 a ton for Alfalfa here and going broke doing it.

Depends on where you want to live. First, check out this website:
Organics
and the links to state projects and even funding for small family farms, organic farms, etc. Tennessee actively supports small family farms, particularly organic farming. You'll find a lot of help, particularly in East Tennessee. The center for profitable agriculture provides a lot of help.

Tennessee has even started a Century Farm program to register farms that have been in the same family for 100 years or more.

Look in the Clinch River Valley along 11W in Grainger County. Lots of good land out that way.
I've had a great time this year buying food at farmers' markets and eating healthier.

Jefferson Co still has lots of rolling farmland. You wouldn't be considering lambs, would you?

Grainger county might be a good option. It is northeast of Knoxville and has a lot of farms that are organic and work with the Knoxville Slow Food movement.
What kind of goats do you raise? Do you make Cheese?

I'd also recommend Sweetwater or Athens, TN. Dairy is a booming biz south of Knoxville.
