So which of these could feasibly come here and which are a long shot? American Apparel and Trader Joe's are very feasible, IMO.

Trader Joe's I can see, AA I can't. I'd LOVE it. But the Knoxville/east TN market seems more situated on food and less on fashion...

Trader Joe's has no plans to come to Knoxville right now. Management does not think the demographics are a good match to their business model. I think they're wrong about that.
And you nailed it, jabogitlu, food is the watchword here. The only store I really miss is Nordstrom's, because it's one-stop shopping and they have free personal shoppers who'll call you when something you like/want comes in, charge it to your account and mail it to you, without you ever having to leave your computer. If you're willing to go in, they'll even do free alterations, no matter how much-- or little-- you spend. And they have the best customer service ever. The customer is always right... even when they clearly aren't. But I doubt Nordstrom's will ever come to Knoxville.

We must make then change that theory! I would definitely go there! I've never been to one, but I watched a blurb on the Travel Channel (I think) about it and it looks like a great place to shop! I've checked out some of their stuff online as well. I love the stores that go out of their way to carry something different than the rest. I could care less whether the store across town has the same item for 3 cents less, but if they have something I want that the closer ones don't... I'm there!

I see no reason why Knoxville can't have an American Apparel if Charleston, SC has one. Larger college, larger city, larger suburbs. The only advantage Charleston has is more tourists, but Knoxville still sees its fair share. I'm sorry, but I can't imagine Charleston's per capita being that much higher than Knoxville's. And AA isn't an upscale store anyway...

Dunno, for my wallet AA is pretty upscale. $24 underwear is upscale. Still, though, I get your point - I would rank it below Express or maybe a couple other similar stores that Knoxville has.
And since it's already in Nashville and Memphis...
