Looking for Recreational Classes
Does anyone know where I could look into taking some classes such as a cooking class, art - photography, something of that nature. Just bored and looking to get into a new hobby and meet some new people. I'm not really familiar with the area at all as we moved here from Chicago only about a month ago. We live on the east side of Knoxville so I don't even know if there is anything like that out here...? Any suggestions would be much appreciated!

Lots of options.
University of Tennessee offers excellent classes in just about anything through their non-credit Personal and Professional Development program. I've taken several and really enjoyed them. They offer all kinds of things and a wide range of people sign up. UT Professional & Personal Development
Glass Bazaar has cooking classes:

Sugarbakers (on Central off Merchants Drive) has cake decorating classes. If I can ever find time, I plan to take them.
