Anyone know of places that might teach this skill?

Just a wild thought...call either the O'Connor or Halls Senior Centers. Ask if one of their members would give canning lessons. They may even have gently used pressure cooker and Mason jars available.

These are still offered by the USDA Extension services, just like they were back in Grandma's time.
Blount County offers a Canning College.
2009 CANNING COLLEGE
June 29; July 6, 20, and 27
6:00 to 8:00 pm

There's an online course through University of Georgia
National Center for Home Food Preservation

There should be one in Knox County but I can't find it. UT runs the extension program.
