I didn't see skiing mentioned, but Las Vegas Ski & Snowboard Park opened yesterday and Brianhead Ski Resort opened about a week ago.

If you're not into hiking, just the drive through Red Rock Canyon, or The Valley of Fire, is nice too. Stop at overlooks and take pictures. At Valley of Fire State Park see 900 year old petroglyph's carved into the "desert varnish" on the rocks, as well as petrified logs, etc. Afterwards stop at The Lost City Museum in nearby Overton, NV. Or drive up to the Mt. Charleston Lodge and have a bite to eat, sip a potent Mt. Charleston Coffee, and maybe take a ride on the horse drawn sleigh. After the "coffee" make sure you have a designated driver to bring you back.
