In fact, if you read my earlier post on the subject, you're SPECIFICALLY looking for the place that doesn't have an English menu because they don't cater to the lao wai.

Best bet is to get completely out of your comfort zone, and find a place that sells steamed chicken feet.

It is out of the way, but China Tango China Tango - Henderson | Urbanspoon is as extremely good. I'd put it up there with any Chinese restaurant in Cupertino.

Also, there's no reason to discount the casino Chinese restaurants. Jasmine at the Bellagio is EXCELLENT Chinese food. High-end, real-deal food fit for an emporer. A little more pricey than the General Tso's over at Panda Express -- but you get what you pay for.

Now if you'll excuse me, I'm preparing sushi today. 10,000 pieces of sushi. I'm going to have to sharpen my knives when I get home.
