I *think* there is a bar in Vegas called "Don't tell mama" which is a broadway Show Sing along bar, there was one in NYC (changed there name to '88s') that was GREAT!

It's in the Fremont East District between Las Vegas Blvd and El Cortez, across from Insert Coins. All of the bartenders perform on the piano and sing.

I know you said off strip but I cant help myself. There is Pete's Dueling Piano Bar. Not sure about their drink prices, sometimes on facebook they put specials. There is the Piano Bar at Harrah's too, pretty fun but if you get tired of that you can watch the band at Carnaval Court- Drink before you go in there though.
