There are a few.. are you talking about full event management that is handled by the individual CSMs at each venue? If you're talking convention and conference a/v production, he biggest player is Freeman. They own Encore who does the A/V at 17 of the local properties. I work for an independent A/V company who has an office here as well. And there are quite a few of us around the valley.

Due to the heavy union presence here, though, it is very difficult to work economically in the area venues. I, personally, do not go after local shows, as I can do the same event in most other cities for a third of the price. Rates here are comparable to San Francisco, Chicago, and New York City - all places with a huge union presence. I tend to do most of my work in Atlanta, Texas, Florida, and Arizona.
