I've stayed in many of the hotels on the strip.
Mandalay had beautiful rooms but was very noisy. Thin walls. Beautiful to stroll around the hotel and lots to see and do there. Excellent food.
Luxor has beautiful rooms. A bit small but very nice. Has novel inclinators instead of elevators. They go diagonally along the pyramid walls. Quite the experience. Also lots to see and do there.
Excalibur - too many noisy, screaming kids for an anniversary getaway. It's a fun place for children.
Tropicana is a bit old now but still does great buffets at a reasonable price.
I would recommend the Flamingo along with some others here who have already recommended same. Get a room above the 20th floor overlooking the Bellagio fountains and it will be perfect.
Mirage is nice for a stroll though but their rooms were quite small. Not much of interest there for me anyway.
I've often also stayed at Stateline at very cheap rates. I like the theme of Buffalo Bills and it's quiet for sleeping. The strip is a half hour drive away.
Too many to mention. I like to go somewhere different each time but some I've stayed at 2 and 3 times.
I will go back to Flamingo again.
Good luck and enjoy. Happy Anniversary.

Wow...lots of responses. Thanks! I'm not sure if they simplified things.
I actually never even considered Caesar's, but I saw it mentioned a few times.
I did see Southwest had vacation specials, and Wynn was listed at a pretty reasonable price. The only problem is Southwest is only booking up to March. We're going in June. So, I'm not sure if the good prices will be there when they are ready to book for June.
Decisions, decisions. I hate making decisions!
Ok, time for another recommendation, if you don't mind. If I wanted a limo to pick us up from the airport, what company is good?

I just have to say that the Bellagio Fountain view from my crappy suite in Flamingo was cool, but I had to go to bed early one night and they were so loud! On and off, and on and off. Normally, I would not have been trying to sleep at that time, but I had a very early call.

That's interesting.
We're both teachers, so we're locked in to a particular schedule. I guess we could go on our spring break, but I usually prefer to just relax at home, trying to get up some energy to get through the rest of the school year.
Summer is better for us since we have more time. I guess I'll have to bite the bullet and pay more money to go in June. (Plus that's the month our 25th wedding anniversary is in.)
Thanks for all of the replies.
So, given a choice (and considering the pool area as I like to relax with a book by a pool), would someone be willing to rate the following:
Bellagio, Caesar's Palace, Venetian, and Wynn.

actually it isn't...because a lot of schools are winding down and there are graduations etc, june is actually a good month to get reduced rates.....March on the other hand is a peak month for conventions, the people in the midwest have had their fill of cold weather and want the warmth of Las Vegas, so our rates are significantly higher in March..
Traditionaly March and October carry the highest room rates for the year [there may be short periods where rates are higher]
