What do you like? What are you willing to try? Some of the best food in the country, if not THE best, is in New Mexico. In Albuquerque and Santa Fe, if it isn't really, really, good, a restaurant won't last more than two or three weeks. One of the oldest and most popular restaurants in the Albuquerque/Santa Fe area is Garduños. We have three of them here. They're located inside the two Fiestas, and at the Palms. I highly recommend the carne adovada, the pozole, or the green chili stew. And, of course, you can't eat New Mexican food without some sopapillas with honey to put the fire out.
For the best linguine and clams in town it's Grapestreet (good everything else too, and nice wine bar). Best Mexican food is Frank and Fina's Cocina. I'm still looking for a good Ethiopian restaurant. Ethiopian food is incredible. Great Thai food at Jasmine Thai. I'm also looking for a Vietnamese restaurant as good as Saigon was (the one on Sahara and Valley View that went out of business). Until a better one comes along, I'll stay with Pho Kim Long at Chinatown, even if the name is embarrassing to say in mixed company. Those are just a few of many good Las Vegas restaurants. One of the few benefits of massive growth over the past 20 years.

I went to Cathay House at 3 PM Did not know they stopped the carts at 2. Had lukewarm left overs Yuk.
I also went to Changs on Decatur. Nothing to write home about. I will give Cathay house one more shot this weekend on a morning.
I am hunting a place that has that soup in a dumpling like they serve at Yank Sings in San Fran if anyone has eaten at that place in san Fran.
Next I have a craving for cajun food. Where is the best place for that. Ok Please do not tell me Landrys because that is less than Authentic.

Pho Siagon 8 is pretty decent on Spring Mountain and Westwood. I've been going there for years. I think they are from San Jose, CA which has probably some of the best Pho restaurants in the West.

I believe I misread the original post and thought you were just asking for dim sum places. I should have stressed that Orchid Garden has whoop ass dim sum all day and it is scrumtrelescent. Their regular food isn't bad either. For normal Chinese food there is an spectacular place inside the Chinatown mall. Not sure what the name is but it's a huge open restaurant in the middle of the indoor shopping center that serves everything family style. Great food and good prices. Plus, as an added bonus the bakery there has bbq pork and chicken baked goodies (the actual name escapes me at the moment, the puff balls with goodness in the middle) for like a buck apiece.
Cajun is going to be hard to come by but there is a good crawfish place across the street (North) from Lucky's on Spring Mt and Decatur.
